As with any major American holiday, my family takes it upon ourselves to gorge as a way of celebrating.  4th of July happens to also be FeistySis’s wedding anniversary, so double the celebration, double the… food!

Funny, I was just about done taking pictures of her giant lobster pot – which she kept showing to me proudly – when she said “Did you take pictures of the pot?”  Yes, dearie, I did, and I’ll share it here so everyone can bask in the wonderful that is having a sister who has about three million times the kitchen products you do, and cooks about 1/10th as much (I cook for myself a LOT, I just don’t post about a lot of it because it isn’t really blog-worthy).  😛  Do I sound jealous?  I promise you, I’m not jealous… of that lobster pot!  😉

I decided to make and bring a salad over as my dish.  Cutely, FeistySis asked me, “Does this salad have a name?”  No, it’s just a salad… I didn’t think of anything creative to name it…

Rather colorful, the way I like my salads: two types of lettuces from my CSA, purple cabbage, hard boiled eggs sliced, yellow bell peppers (the local store by me sells them for about 79c/lb!), grape tomatoes… and a lemon dressing that I made using Lucini lemon olive oil and Victoria Taylor’s Seasonings herbs de Provence (both items acquired at Food Fete). It came out tasting pretty good, but a little light – I think it needed a lot more salt than I’m used to adding to dressings, I probably should have used vinegar instead of just lemon juice…

After I’d tossed it all together. I think most people agreed with me – it was nice to have a light dressing that didn’t weigh everything down on this hot summer day, but it could use a little more salt. Ah well, lesson learned – oh, and to also definitely use the mortar & pestle on the herbs de provence, as some of the bigger pieces didn’t quite soften enough to my taste. My fault.

SMIL decided to make penne & meatballs “for the kids” so this was also on the table, but I’ll be honest – it was tasty, but there were other things that drew my attention…

and a big platter of ginormous lobsters.  No more pictures after this because once I dug in, you know I didn’t stop to breathe or take pictures of anything till all was gone.  YUM.  Thanks to FeistySis and BIL for hosting – we had a blast and the kids were adorable as usual!!!

    I always eat corn every Independence Day. This year, I was in VA. I ate corn anyway AND I played with fireworks. Yay South!

    The photos on this post look overly digital-processed. There was a time when the photos here made the food look somewhat appealing. The ones here are hard to look at. I think only “TT” posts decent photos these days.

      I completely agree that the photos on this post are overly processed, however – and no disrespect to TT – I disagree that he is the only one with decent photos. I’m positive that if you look through the past month’s worth of posts, all three of us have put up photos that are drool-worthy. Of course, you’re entitled to your opinion, as I’m entitled to disagree with it. Sorry you feel the photo quality has gone down with my new camera as opposed to gone up! Thanks for letting me know though, honest feedback is always appreciated.

    Processed or not.. the food still made me hungry and realize I haven’t eaten nearly enough corn yet this summer. And isn’t that, along with your writing style, the real reason we’re all here reading?

    We also had some lobster at Highpoint and then ate more at a picnic in Central Park. A great way to celebrate freedom!
