Starring… Salad

Working Lunch 01 

For a while there, my CSA was giving me nothing but lettuce and more lettuce.  (Okay, and other things, but I really had lettuce coming out of my ears at one point.  More than 40 cups’ worth.) 

I prepped all the lettuce in one day – wash, chop, dry, then store – to keep in the fridge so I could just pull it out and throw together a quick salad whenever I needed to eat.  This made my life super easy – a few heatwaves, the lack of desire to eat, busy workdays, I just opened the fridge and pulled from various containers whatever I wanted to eat. 

Fried tofu croutons
Chopped purple cabbage
Various lettuces, chopped
Chopped bell peppers
Marinated artichoke hearts
Dried fruits or nuts

Just a couple of things I keep on hand to jazz up any salad I toss together.  I also wrote this article talking about salads for my CSA… but I also was recently sent something that I’ve now incorporated and have been adding to lots of my salads for extra crunch and tons of flavor: Onion Crunch by Loeb’s.  (That video on the front page kills me every time I watch it.  It’s hilarious.)

I have to say, I’ve also been known to eat them straight out of the bottle – it’s addictively good, like those “onion rings” chip bags I used to buy as a kid.  So good!  Tons of onion flavor, too. 

How do you guys eat your salads?  What special add-ins do you put in them to make you happy, fill you up, and make you forget you’re really just eating rabbit food?  Hahaha!  (Teasing.  I actually grew up eating salads all the time, happily.  I loved them.)

    you don’t win friends with salad.

    i like adding goat cheese and making a homemade balsamic vinaigrette.

      What do you put in the vinaigrette besides balsamic & oil?

        it ain’t a viniagrette if it is just oil & vinegar. it needs to be an emulsion.

        i like dijon mustard. put some in bowl add vinegar then start to whisk while doing a “high” drizzle of olive oil. keep whisking till throughly mixed. taste, add more of whatever you think it may need, salt & pepper. the result shouldn’t separate once left alone.

    I like adding fresh fruit… granny smith apples provide a nice tart crunch, or grapes for a little sweetness.

    As children, my sis and I used to make “taco salads” with lettuce, tomato, meat, cheese, corn + dressing of salsa/sour cream and our “secret ingredient” of… Nacho Cheese doritos!! Ok, it barely qualified as a salad and my mother always said it looked disgusting, but mixed all together it was DELICIOUS!

      It sounds delicious – I’m sure I’ve made the same but not called it a taco salad. Hahaha, I make those at bad buffets to fill me up 🙂

    I was liking the idea of the croutons until I saw they were tofu 🙁
    I have given up trying tofu, I’m just gonna have to accept that I don’t like it!
    Crunchy onions for salad……. mmmmmmmmmm! *wanders off to see if she can find a slimming world recipe for these*

      Now now Susan, tofu croutons add protein and no (few?) carbs. And if you fry the heck out of them like I did, they don’t taste like tofu!

    I like to add pita chips or anchovies. Mostly anchovies. Love the salt!

      I have to buy some more anchovies. Is there a brand or kind you like best? I’ve been buying flat tins and they’re OK but some of them are bonier which I don’t like, even if I can chew up the bones I am not a fan. I like to save the oil to use for other stuff though.

    I like grilled chicken, tomatoes, parm shavings, caesar dressing, and croutons…probably should forget the croutons and just get myself a chicken ceesar on baguette instead.
