Project 365: Day 73

If you’ve ever wondered what I eat on Mondays/Wednesdays when I have class basically from 3pm to 8pm (with about an hour break between classes)… this is generally it, on average.  A sandwich, a small bag of chips of some sort, some fruit, a stick of cheese, and a diet soda.  Today’s lunch is a bit larger because I went a little nuts (plus I planned on sharing my cuties with my study group, so I brough extra)… but my lord, was it delicious. 

Diet Pepsi; Cheez Doodles with jalapeno flavor; sliced up Fuji apple; half of a Shamrock Brownie; 6 Cuties; a stick of Monterey jack cheese from Trader Joe’s, and that sandwich.  That sandwich, my dear friends, is what I call the bomb digs, yo.  OMG.  Almost as good as a Thanksgiving sandwich but just not, this was AY-MAY-ZING!!! 

Toasted potato bread schmeared with honey mustard, layered with homemade corned beef and slices of roasted cabbage.  OH MY STARS.  Everyone needs to eat this sandwich at least once in their life.  *drool*  Thankfully I have more corned beef because I for damn sure am going to need another sandwich or two just like so… nomnomnom.  Gimme gimme gimme!!!

Also, to increase the lovely of my day, my professors returned our recent exams: A (the highest allotted) on my in-class English essay, and a 108 on my French exam (out of 100).  To top it off – as if I wasn’t nerdy enough! – in English, a student asked how many people got A’s and the professor admitted only two or three people did.  The same student immediately said “I bet Yvo got one, didn’t she?” and I just kind of half smirked and half blushed.  Oy.  THEN, in French class, I guessed something irrelevant correctly so I dorkily said, “Do I get extra credit for that?” and the professor was all “Listen, Ms. 108, do you really need extra credit?”  I just responded, “Thanks for calling me out!”  Grrr 😛  Hahaha.  I’m a nerd. 

And proud… 😉

    How very Irish of you! Everyone should make corned beef, and not just around St. Patrick’s Day. So good, and there’s always leftovers. Do you do anything with the brine?

    What a nerd! 108 and still asking for extra credit? No shame. ;P
