Baking cookies for charity? Yes. Charity that benefits kids with cancer? Double yes.
I’ve actually promoted this charity in the past, but hey you can never have too much awareness about really great charities. Signing up for this great campaign by OXO of the awesome kitchen tools means that they are donating $100 on my behalf to this charity for writing about this campaign. Honestly, it’s a win-win-win… the third win is because I don’t care for sweets and am giving away all the cookies to whomever I see during this time.
I received the OXO cookie press (affiliate link) and had fun playing around with their included recipes — I’ve talked my face blue about how I’m not a strong baker, but practice makes me more comfortable with baking and working with dough, plus I’ve generally had positive results with cookie recipes. After some initial trouble figuring out how to work the press so that the cookie dough would come out neatly, I figured it out (it was a cookie sheet malfunction) and was consistently pressing out uniform cookies with no trouble whatsoever.
LOVE. I’m a little obsessed with my cookie press right now and have been Googling up recipes like mad, plus baked another 3 batches from the initial batch. I’m about ready to pick up the autumn set of cookie plates because they are that easy to use! The only downside is that I don’t like decorating cookies and these seem to need a little extra something-something to make them truly shine, but we’ll see…
The two recipes I used are from the booklet, linked here – I made both the butter cookies (which are decorated and visible in the pictures; I just added a dollop of plum ginger apricot jam before baking and they baked up sticky chewy yummy) and the cream cheese spritz cookies, except I subbed in almond extract for vanilla since I um, couldn’t open my vanilla extract bottle. Haha. I highly recommend the cream cheese spritz recipe, but I’m going to keep looking for another butter cookie recipe and welcome any suggestions! Also, if anyone has a great recipe for a lemon icing to ice these with… I’d be ever so grateful!!!
