Another week down!
Dark chocolate Kit Kat; zucchini potato gratin (without cheese); mushrooms; bing cherries; kangkong belacan; grape tomatoes and a bocconcini mozzarella; roasted salmon.
Okay, I’m a little proud of this – it’s like a mini caprese salad, but quicker and faster. Grape tomatoes, a small piece of mozzarella – you know, you can buy the small snacking bites – and then drizzle a little olive oil, sprinkle a little salt/pepper, boom done, some freshness in your lunch. YUM.
Spinach tagliatelle with salmon/saffron/tarragon beurre, cherries, chipotle honey braised cabbage, and grape tomatoes… with a caramel Lindts chocolate to finish with something sweet.
Potato skin and sour cream (leftover from… somewhere…); chipotle honey braised cabbage; grapes; tomatoes; braised cucumbers; and a little piece of chocolate.
Potatoes; cooked greens; fresh corn; braised cucumbers; mini caprese; braised cabbage.
No fruit in my lunch means no chocolate.
(Though let’s be honest, those of you who know me know that I don’t even care for chocolate all that much anyway…)
Braised cucumbers; cooked greens; braised cabbage; grapes; corn on the cob; tomato & tarragon; potato; small piece of Ghirardelli chocolate (sea salt caramel) – just the right amount of sweetness to finish the meal.
Another week passed by so fast!
Happy bento, everyone!

As much as I try, I just don’t like cooked cucumbers. Cured/pickled ones are just fine though.

Would it be too self-congratulatory if I said “you haven’t had mine…”? Hahaha

Adorable and clever! Totally thinking outside of the sandwich box with the nod to the ultimate 80s appetizer, the stuffed potato skin.

Haha, thanks! Sometimes you just have to use what you have, you know?
