Dater Mountain – Hiking Lunch

June 29, 2011 by Feisty Foodie 8 Comments

Recently, StB, C2, HB, BF and I drove upstate to Dater Mountain to hike.  Unfortunately, it started raining just as we got there, and it was about noon, so we sat in the car and ate the lunches we’d brought.  I took this opportunity to pack something cute for the BF… because I’m nutty like that.  He agreed… because he loves me 🙂

I’m sure I’ve mentioned many, many, many… many many times in the past, that BF is a man of simple tastes.  So while I made it cute, I didn’t make it fancy.  White bread layered with Boar’s Head bologna, no spread, no lettuce, nothing but meat and bread.  This is one of his favorite types of sandwiches, and he chowed down with not a single complaint.  I used the DynoBytes sandwich sealer/cutter (affiliate link; while looking for that, I found THIS!!!) (it doesn’t actually seal for me, but I don’t try very hard to seal my sandwiches) to make it a little cute, and shoved it inside a Tupperware sandwich container.  (There’s actually two sandwiches there, stacked on top of each other.)

As for my lunch, salad! with homemade tofu croutons and cilantro-shallot dressing.

Romaine lettuce, yellow and orange bell peppers, purple cabbage and all those yummy bits.

All tossed together with the dressing.  So good.  I love a colorful salad with lots of texture, lots of crunch.  There’s something about crunchy food that makes me feel satisfied.  Weird, right?

Luckily, after we were finished eating, the rain cleared up.  And then off we went up the mountain side.  We lost the trail quickly because the blazes were far and few between… and maybe also because we didn’t have a map.  😉

I tried taking some scenery shots, but I’m not that pleased with how they turned out.

Despite how grey it was out, the sun came out and started drying everything.

Then we all glanced down and discovered swarms of ticks all over the bottoms of our legs.  Well, some of us, anyway.  So we decided to go home.

Good hike… good times 🙂 But next time… we should make sure we have a map.  And bug spray.  Hahaha!

Who released the Asians into the wild? Did you not see Jurassic Park?

I read it, too. I don’t remember there being Asians. (I was 12 when I read it, and I think 14 when the first movie came out.)

Just because I tape my fingers together so I can pretend to be a dinosaur doesn’t mean I am one!!!

I would have screamed from the ticks though I also would have been sprayed head to toe with the strongest bug spray with deet.

Man you guys pack light for hiking. My past hikes included several courses like a picnic. Hahahahaha!

It was misty/cool that day so we all stupidly didn’t spray, and I totally forgot to bring my spray (which I meant to just in case). It was not our finest moment in terms of planning!

Also, we started driving around lunchtime, so I didn’t figure we’d be stopping to actually eat at the end of a hike. And I only photographed the stuff I made; I also brought chips, water, cookies, and slices of apple with goat milk caramel…

Plus BF is the one who has to carry the bag (as you can see in that pic!, that’s my blue North Face bag hahaha), so I didn’t want to overload him anymore 🙂

    SWARMS of ticks? ._.

Those sandwich cutters are cute. I may order those when I finally get a source of income.
