Okay, I know, I’m not a big fan of Bobby Flay, but I am a huge fan of mayo (and I actually do use Hellmann’s at home, or the store brand), and the names of these sandwiches are too cute to pass up!
I just really love the vibrant colors of this picture. Otherwise I wouldn’t bother showing it. It does make me think of autumn, though, because of all the orange.
Anyway, here are two recipes recently sent to me that can’t be found on the Hellmann’s sandwich site. Yes, an exclusive 😉 or I think it is anyway! I couldn’t find these recipes on there.
Memorial Day Sandwich/ School’s Out For Summer Sandwich
Chicken Muffuletta with Spicy Olive Relish Mayonnaise (Serves: 8)
Spicy Olive Relish Mayonnaise
·2 roasted red peppers (from a jar), drained
·½ or 1 jalapeno chile, chopped
·2 cloves garlic, finely chopped
·½ cup Hellmann’s® or Best Foods® Real Mayonnaise
·¾ cup prepared olive relish
·¼ cup coarsely chopped fresh flat leaf parsley
Muffuletta
·4 boneless, skinless chicken breasts
·2 tablespoons olive oil
·Salt and freshly ground black pepper
·16 ¼-inch thick slices provolone cheese
·1 large round loaf of bread, sliced in half
·Spicy olive relish
·Spicy Olive Relish Mayonnaise
·Aluminum foil
·2 bricks or a cast iron pan and a few heavy cans.
1.Combine the red peppers, jalapeno, garlic, mayonnaise and vinegar in a food processor and process until smooth.Scrape the mixture into a medium bowl and fold in the olive relish and parsley.Set aside.
2.Heat the grill to high or the grill pan over high heat.
3.Brush the chicken breasts with oil on both sides and season with salt and pepper. Grill for 4 to 5 minutes per side until golden brown and just cooked through.Remove from the grill, let rest 5 minutes then slice into ¼-inch thick slices on the bias.
4.Spread some of the mayonnaise on the bottom half of the bread, add a few tablespoons of the olive relish, add half of the cheese, half of the chicken and repeat with the remaining ingredients, (mayonnaise, olive relish, cheese, chicken) in that order.
5.Spread the cut-side of the top of the loaf with more of the mayonnaise and place, mayonnaise-side down on the chicken.Wrap tightly in foil, place on a baking sheet and place bricks or a heavy cast iron pan on top.Refrigerate for at least 1 hour (to allow the flavors to meld) or overnight.
Firecracker Spectacular/Fourth of July Sandwich
Shrimp Salad with Red Chili Mayonnaise & Blue Corn Chips (Serves: 4)
Red Chile Mayonnaise
·1 cup Hellmann’s® or Best Foods® Real Mayonnaise
·2 tablespoons ancho chile powder
·2 teaspoons fresh lime juice
·1 teaspoon lime zest
·¼ cup chopped cilantro
·Salt and freshly ground black pepper
Shrimp Salad
·1 pound cooked shrimp (21-24 size), each shrimp, cut into 3 pieces
·½ cup finely diced celery
·¼ cup finely diced red onion
·Red chile mayonnaise
·Salt and freshly ground black pepper
·8 buns, sliced ¾ of the way through
·8 tablespoons unsalted butter, softened
·Blue corn chips, crumbled
1.Whisk together all ingredients in a small bowl, cover and refrigerate for 30 min to allow flavors to meld.
2.Combine shrimp, celery and red onion in a large bowl.Add red chile mayonnaise and gently fold to combine, season with salt and pepper. Can be made up to 8 hours in advance and stored covered in the refrigerator.
3.Heat a grill, grill pan or preheat the broiler.Butter both sides of each bun and season with salt and pepper.Grill butter-side down or broil butter-side up until lightly golden brown.Divide the shrimp salad among the rolls and top with some of the blue corn chips.
Sounds so yummy, doesn’t it? And what adorable names! Really, the names are what got to me – and the fact that seriously, all of these are made with ingredients that aren’t hard to find, and by and large are things I would totally eat. Mmm, you know how I love sandwiches, right?! 🙂

I have no idea where the names came from but aren’t they cute?! I will definitely be making my own versions of these sandwiches… soon… yummy! (One of the things I missed the most during my Meat Hiatus was a good sandwich, brimming with roast beef, sigh.)
