Holiday Potluck #2 was hosted by myself & Cookie; we invited a couple of our coworkers (across different floors; we each work in different practice groups) and asked them to bring in whatever they’d like. It was a very casual affair, we just snagged a table in the cafeteria and set up there.
Since it was such a hit last time, I made bacon fried rice again. Unfortunately, a really busy weekend led to a last minute scramble to make rice and turn it into “day old” rice (you can’t really use fresh rice for fried rice, it doesn’t fry up as well), but that didn’t work, so I just fried it a little extra hard. The end result was still a touch mushy with crispy parts where I tried to fry it harder… but people still seemed to like it (though there was a little bit more leftover this time, which I quickly pushed off on Linguine to take home).
I also made brownies from a mix (remember, I don’t bake; at least I can make brownies from a box… biscuits from a box, not so much) and cut them into bite size pieces so people would feel OK with eating more than one 🙂
Due to timing and scheduling constraints, Cookie was unable to make the dumplings she’d intended to, and bought pizzas from Papa John’s to make up for it.
Something about this picture makes me feel happy. Maybe it’s the hummus? With baby carrots, grape tomatoes, and loads of delicious olives. Provided by another coworker, who I believe shares my passion for comic books 😉
Linguine made whole wheat spaghetti with a walnut pesto, served cold. Yummy.
Last but not least, dessert came in the form of cupcakes. Here’s my half of a red velvet cupcake… NOM NOM NOM.

Another successful holiday potluck; we all left happy, stuffed, and with a smile on our faces.
