To kick off the week – in case you didn’t read, I’m not here this week (and so will be responding very, very, very intermittently to emails and comments); I’ll be in San Francisco eating all sorts of goodies to make the East Coasters jealous, but will have plenty for you to read while I’m gone – here’s a quickie, sort of recipe, more of a guideline.
Vilify me all you want for this, but I took a box of frozen French cut green beans (they were on sale this week!), thawed them, then plopped all of them into a frying pan as it warmed up.
After it seemed mostly heated through, I added some of the chili butter I’d made last week, swished it all around the pan quite a bit, then turned off the heat. I fried an egg (mine actually came out a little overcooked, boo) and slipped that on top.
Voila! A poor man’s version of egg over asparagus, perhaps, but still yummy nonetheless. Probably could have done with a cracking of fresh black pepper on top, and a sprinkling of sea salt, but it was still really tasty. The chili butter didn’t overwhelm at all, and in fact was very much in the background (so don’t expect a lot of heat; if you want a lot of heat, though, try adding more of the chili butter, or some hot sauce, even), though at the end of each bite, my mouth tingled a bit – pleasantly, in my opinion, letting me know the heat was indeed still there.

odd, lately i’ve been into omlette’s for breakfast…
especially sausage and swiss omlette, or lobster and swiss omlette, or ham, spinach, and swiss omlette….not much into the sunny or overeasy eggs.

I’ve never done egg over asparagus before, its usually egg over hash browns or toast for me. This is something I just might have to try sometime (does it work with other veggies too?)
