Having an overabundance of bread from the Grand Central Market tasting a week prior, I did what any normal girl does with this much bread on her hands: I made panzanella.
Actually, I gave away every loaf but the ciabatta, easily hands down one of my favorite types of bread, but still could not finish it before it started to go stale (fresh bread tends to do that fairly quickly). Le sigh. I’ve never eaten nor made panzanella, but having seen it on Food Network a few times, I decided to give it a go.
My version employed- because this is what I had available to me, though from my browsing, I think you can toss in whatever strikes your fancy:
1 diced medium sized tomato
1 thinly sliced red onion (on the small side)
1 box thawed and drained chopped spinach
1/2 loaf of few-days-old-ciabatta, cubed
kosher salt
freshly ground black pepper
grated pecorino romano cheese
a pat or two of butter
thinly sliced garlic, a couple cloves (more or less to taste)
extra virgin olive oil
Heat up a skillet with the butter and garlic. Add the cubed bread, toss it around and toast it up a bit. Remove and let cool.
Toss with the other ingredients, serve and enjoy!!!
