Homemade Breakfast Sandwich

On ambitious days, I like to make myself breakfast before heading to work. The past few days it’s been two slices of toast with butter, but that’s partially because I’m ah, trying not to totally gain 20 lbs. literally this holiday season (I’ve been stressed and eating without looking for about 3-6 weeks now… seriously… me, the girl who doesn’t snack normally, has been dipping into things left and right, ugh), and it’s quick. Anyway, I live pretty close to work, so it’s almost inexcusable that I don’t make breakfast for myself in the mornings, actually.

In any case, a few weeks ago, I happened to pick up a big bag of fluffy, delicious rolls, and realized hey, with some breakfast sausage patties, eggs and cheese, this could work. So I turned to my trusty memory, aided by my website and camera, and dug up this recipe for sausage. Semi-healthy, fully-homemade, and so easy!!!

The great thing is, I cooked up a bunch of patties on a Sunday and just popped them in a plastic container in the fridge. So each morning, as I got out of the shower, I’d throw a patty into a skillet over low heat and while I got ready, it’d heat up slowly. When I finished dressing, I’d cut open a roll (optional: toasting and/or buttering the roll- I didn’t butter the one pictured because it was still really fresh) and layer down some cheese. Pictured is Pepper Jack Cheese (my cheese obsession of the moment when I did this), but this week I’m using thin slices of American cheese. While the sausage was browning up nicely, I beat two eggs till fluffy, added a pink of kosher salt and a splash of milk. Plopped the sausage patty onto my slices of cheese on the roll, wiped out the pan, added a pat of butter, then added the beaten eggs. You all know how to scramble eggs, right? Well, I just did that, without scrambling too much.

Put it all together, and voila~ a breakfast sandwich infinitely healthier than a Mc-Anything, and it’s pretty inexpensive (a pound of ground chicken cost me a little over $2- I had the rest of the ingredients, and I cut out the apples- and it lasted me a whole week).

    That looks great! Good for you! I did the same thing recently…grabbed an english muffin, some prosciutto, some basil and cheese and toasted away an egg sandwich. It was awesome and was so proud of myself πŸ™‚
