But I stuck with classic Caesar dressing (from a bottle; maybe next time I’ll make it from scratch).
It isn’t hard: chop up some Romaine lettuce, wash. Chop any assorted veggies you want to toss in; sprinkle with Parmesan; add croutons and dressing, done. I did make my own garlic croutons, but even that is awesomely simple: toast up some slices of bread (I used white, which is what I had on hand), rub a cut clove of garlic all over both sides and brush with olive oil. Or switch up the steps, some people might do that first but the garlic brushes up nicer when the bread is a little toasty/warm.
Because the boyfriend said “EWWW, salad!” and I do try to keep him fed, for the most part, I whipped up something slightly different for him to enjoy.
Grilled chicken breast over rigatoni & sauce [from scratch].
For the grilled chicken breasts, well, my sister gave me a brand new George Foreman grill a few months ago, so I’ve been kind of wondering how it would perform. I took two boneless, skinless chicken breasts, sprinkled them with salt, fresh ground black pepper and Italian seasoning (Caesar was the original Italian guy!) on both sides and threw them on the grill for 5 minutes after it’d pre-heated itself.
My final judgment… eh. Mine was pretty dry, but my boyfriend appeared to enjoy his thoroughly. I also cut mine into strips before plating, took pictures, then had to run around getting drinks and stuff together, so maybe it dried out in that time. Somehow, I doubt it. It was also a really, really blah way to prepare chicken in general, white meat being my less favorite meat, so *shrug* But, overall, it went with my salad nicely and the Caesar dressing made it slightly less … dry. Yum.
The salad itself was delicious, but the point I’m trying to make is go wild. Get creative and make things the way you like them. Screw the rules sometimes- my salad was great and filling. And… sort of healthy. All of this homecooking is getting me a little pudgy…

Caesar dressing is pretty easy to make from scratch, and sadly, it’s not that healthy.. but everything else was (well, except the bacon bits.. haha) I got a George Foreman Grill for free but we rarely use it. It sucks to clean and I think it’s just better over the stove.

Why do I read you in the middle of the night when I am starving….this looks SO GOOD!
I find that instead of just brushing on the italian dressing place it in a ziploc bag with the breasts and let it sit for an hour of 3 in the fridge….it won’t cook up dry….my kids love it and then we give them a little cup of [fresh] dressing to dip it in…Paul Newman’s is our favorite – so continental aren’t we!
We don’t have a Foreman Grill, but we do have a huge heavy duty pan with the ridges in the bottom and it grills up meat just like if we were out on the grill…we love it – except it is so HEAVY!
