I re-did the lemon chicken stir fry I created a few weeks ago (seen here), with a bunch of changes. I added the scallions to the marinade; I also added broccoli and mushrooms. Overall, it came out pretty well, though my boyfriend isn’t a big fan of broccoli, so he took all of the red peppers and I took all of the broccoli (I love red peppers, but I love him, too). Served it over rice and the leftovers were great for lunch the next day, too. Yum!
