“Leave the gun, take the cannolis.” After a full day of discussing the Godfather Trilogy and whether or not Fredo really deserved to die, it seems only fitting that I would decide to make what my magazine called a “Holy Cannoli Cake.”
I don’t like baking, because you have to be pretty precise, whereas with cooking, you can kinda guess and fix as you go along, and once you get good, you can just eyeball it and be right. But this was basically a “No Bake” cannoli cake, so I decided to try it. I must note that I did change the recipe a little, (because I don’t want to post recipes that are 100% not mine) and that while the recipe swears it will take you 20 minutes total to create, it took me closer to 40 minutes(I fucked up the frosting twice because I was trying to hurry, and I also never frost anything so I had to wing that).
Also, this recipe should be filed under “simple, fast, and looks impressive.” There were only 5-6 ingredients.
- 1 cup milk (not shown; I used whole)
- 1 package Jello Instant Pudding Vanilla flavor (I’m sure you can use chocolate)
- 1/2 cup ricotta (again, I used whole)
- 8 ounces chopped semi-sweet chocolate (I used semi-sweet chocolate chips), separated
- Store bought pound cake (LOVE that Entenmann’s
), horizontally cut into 4 slices
- 1 cup THAWED whipped topping (I used Cool Whip)
Pour milk into large bowl. Add dry pudding mix; beat with wire whisk until well blended. (Will thicken almost immediately.) STIR in ricotta; gently stir in 1/2 of the chocolate.
Spread 1/3 of the pudding mixture onto bottom slice of cake. Repeat layers twice.
Microwave remaining chocolate in a clean bowl (45 -75 seconds); stir until completely melted and smooth. Stir in whipped topping. Spread evenly over sides and top.
***I messed up the frosting twice because the first time, I tried to be smart and use the pudding bowl which was fairly clean but not completely. It burned and smelled bitter so I threw it out. The second time I almost had it right, the chocolate was just getting smooth but was hard to stir, so I threw in spoonfuls of the cool whip which was still a touch hard in the center- frozen- so it melted and hardened the chocolate into huge chunks. Wouldn’t, couldn’t, melt it again, so I had to start again. That was really annoying.
