This is a perfect dish to make a little extra for leftovers to take to work the next day. If you’re cooking for more than just one or two people, you can also “chow” (stir fry) some “choi” (veggies) to eat on the side, but for me, I didn’t for a few reasons (hard to buy & keep veggies fresh for me; another pan to clean; only I would eat the veggies, etc). And yes, I would say this dish is fairly soothing, but I’ve come to realize that despite not liking rice while growing up, when I’m sick or cold or just not feeling 100%, I find eating rice very soothing.
- 1 lb. ground beef (not too lean, but not too fatty either)
- splash soy sauce to taste
- salt & pepper to taste
- 1 package frozen peas & carrots (or any combination of frozen veggies you like!)
- 4 servings of rice is about right.
- minced garlic
- minced onion
- cornstarch slurry (see Shepherd’s Pie entry)
Brown ground beef in pan with onion & garlic. Splash soy sauce over, coating. Add dash of pepper. Cook through until meat is completely not pink. Add slurry; bring to a bubbling boil. Toss frozen veggies through; turning to ensure they are covered. Turn off flame.
Serve over rice; fried egg with drops of soy sauce on top optional.
Damn, I really wish I’d taken pictures last night. It was really freakin’ good, despite the stupid rice coming out a little wrong. I scarfed down 2 servings and packed away one for my boyfriend for today’s lunch and one for me for tomorrow’s lunch (since today is wings’ day). However… I might just fry an egg tonight or tomorrow morning to put on top. So yum.
PS I was going to toss a fried egg into my ramen the other night but I ran out of eggs somehow (no idea how since I always have eggs!). I’ve only eaten a sunny side up egg in my ramen once, when I was in college visiting someone, and I got so sick afterwards I swore it off, but I really wanted to try it the other day…. sigh oh well I guess! Next time, because I bought eggs last night – 99c for 18

Thanks for the awesome idea. I’m going to throw you all for a loop and try some whole wheat noodles instead of the rice. I’ll let you all know how it turns out.
