Cilantro Mayo

I’ve mentioned my sandwiches before, and how convinced I am that they are, hands down, the best sandwiches in the universe.  I grew up making sandwiches; my dad liked me to make him sandwiches and I always tried to make it better than last time.  I learned quickly that lettuce (in my humblest of opinions) sucks in sandwiches; tomatoes, cucumbers, all great additions. 

One thing I never learned, however, was that… you can season them.  Okay, maybe it’s not something a person learns, per se, but the idea just never occurred to me (I’m a bit dopey, I admit; a lot of things just never occur to me, really).  I was watching Tyler’s Ultimate one day, and he made a regular sandwich, but then seasoned it with salt and pepper.  I was kind of like, oh!  Hmm.  Interesting.  I filed away that notion in the back of my head, and a few weeks ago, thinking about what to make to bring on a flight to Vegas, I realized… hey!  I can make some interesting mayo-spread.  How do restaurants make them, anyway? 

*shrug*

I chopped some cilantro leaves and tossed it in a bit of mayo, then added kosher salt and freshly ground black pepper, then spread that on my bread.  That’s it.  It brightened the taste of my sandwich with a green flavor and just brought it to a different level.

The sandwich pictured above, sadly, wasn’t as good as the first sandwich I made with this mixture (which was just honey roasted turkey, whole grain bread and the cilantro mayo).  It’s pepper jack cheese, tomato, honey turkey and whole grain bread with cilantro mayo.  Something about the cilantro counteracted the pepper jack cheese; I only tasted either flavor but never both at the same time.  Oh well, lessons learned.

This is now a staple in my fridge though; so simple and an easy way to take your sandwich to the next level.

    This will sound like the most non culinary, what are you thinking that is crap sandwich you have ever thought of, but since you said you don’t season sandwiches must TRY THIS! [&y’know I think you have, bear with me]

    Two pieces of white bread, or sourdough or french….who cares…just white…with crust…

    1 slice american or mild or sharp cheddar cheese

    1 slice beefsteak tomato – now this tomato must have taste….get a neighbor that grew one, buy from a farmer’s market or steal one…not “buysies” from a grocery chain [phew..uck!]

    Slather mayonnaise on each side of bread, layer a slice of cheese and a slice of tomato…liberally douse in salt and pepper…lay other slice on top. [dream a little dream…Alfie…giggle]

    This is the only way anyone can get me to eat mayonnaise…and, in fact, this sammich always tastes better if someone else makes it for you.

    I probably repeated myself…but your AWESOME sandwich reminded me of its’ simple friend.

    Side note…the cilantro and pepper jack? we never mix a highly “flavored” [i.e. pepper jack] with cilantro…we find cilantro kicks any spices rear end…no matter how little you use…cilantro always wins…we even stopped using it in our white chili because it was as if that was the only flavor…no matter how we reduced it from the orig. recipe…

    just a thought….

    Yep, I’m a big fan of cilantro mayo. It definitely brightens up any sandwich with green goodness!

    I’m forever looking for ways to spruce up my ho-hum ham sandwiches. I’m going to make some of this on Sunday and have extra-tasty sandwiches next week! (I just hope I don’t get cilantro stuck in my teeth at work–that would be embarrassing.)

    I made a blackened tilapia sandwich with a salsa fresca and cilantro lime mayo yesterday and almost fainted from the deliciousness of it all.

    Glad to see someone else is a fan of the cilantro lime combo!

    cilantro and mayo is a good mix. Next time, try pulsing the cilantro mayo with roasted garlic. season of course. hope you enjoy it.
