Chickpea Salad and Grilled Chicken of a Different Kind

Okay, so this isn’t a recipe, it’s another cop out.  I am so behind on posting, I have to get through or I’ll never catch up!  A mid-month trip to Vegas and some personal issues just add up to another few weeks behind… ah well. 

I hadn’t planned on cooking that night, but BF had come home from a long day at work, was tired, and didn’t feel like eating out.  So I pulled some boneless, skinless chicken thighs out of the freezer, quickly defrosted them and somehow decided I could try grilling them on the George Foreman as though they were chicken breasts (I detest grilled chicken breasts; they are so boring, blah, dry and just gross, barely palatable if I douse them in sauce/dressing).  With a good dose of kosher salt and freshly ground black pepper, these almost had a crust on the outside to give them a lil extra oomph and tasted pretty good.  Though the sight of all the fat/oil rendering off into that little “grease trap” was sickening, I kind of felt good about it since that meant I wasn’t eating the fat at least.  I also spooned some homemade salsa on top for a little contrasting flavors. 

As for the innocent looking chickpeas in the background; don’t be fooled.  It started off innocently enough- a can of Goya chickpeas purchased with the thought of making my own hummus… months passing by without me even looking at the can… until one day, Aoife’s entry on chickpea salad caught my eye.  ‘course, if you read that post, it actually talks about Molly’s chickpea salad, as made by Brandon… (for her to bring to work for lunch; which set in motion a whole “Awww, I want that!  Why can’t my boyfriend make me lunch?!” until I remembered that my BF + kitchen = mess, disaster, and something huge for me to clean while wearing a spacesuit)  Well, anyway, with 5 ingredients, I really couldn’t say no. 

But still, I held off on making it.  I don’t know why, since I had every ingredient just waiting in my kitchen to be put together like so.  As it happened, I finally got around to it, the day before I’d whipped up this strange chicken, and I just plopped some next to BF’s chicken with salsa. 

Of course, when I handed him his plate, our conversation went like this:

“I don’t like chickpeas.”
“You know hummus is made of chickpeas?”
“I don’t like hummus.”
“No… you thought you didn’t like hummus, but when I kept eating it in front of you, you tried it and liked it.”  (True story.)

*Happy eating!!!  (Sorry, something just came up and I really can’t finish this the way I intended to…. sorry!!!)

    I will never understand chicken breast’s popularity. A duller meat I have never encountered.

    Chickpeas though . . . I feel this is the year of the chickpea. We’re in the middle of a chickpea movement, similar to that of the sundried tomato lo these many years ago. Go garbanzo!
