Bacon Fried Rice

Last week, lacking motivation, creativity, and the energy to spend on making something marginally interesting, I stumbled upon a dish that will forever be part of our repertoire from now on.  You see, our fridge contained a bunch of sad veggies that were on their last legs of life, a huge zip loc of leftover rice, and in my freezer there was bacon.  I always have bacon, even though ideally, I don’t really eat it. 

The little cogs in my brain turned and I thought, I’m going to fry some rice.  I’m a stickler for including protein with every meal, so the bacon made sense. 

I took a few slices (I believe three) of bacon and sliced them into little strips., tossing them all into a cold pan to heat up over low flame (doing it this way ensures more of the fat renders out, though in a minute you’ll see it doesn’t really matter).  Once they’d started to frizzle up nicely, I pushed the bacon to the side and tossed in my chopped veggies- in this case, carrots, celery, and green peppers (basically, whatever was in my fridge).  I let them soften up a touch, then added the rice and stirred it all around together until I felt it was all nicely mixed and heated through. 

Et voila.  Bacon fried rice.  My boyfriend loved this and scarfed down two huge bowls before declaring the rest of the leftovers his to take to work for lunch the next day.  The bacon crisped up nicely and added a nice bite/chew to each bite.  Yum!

    You know … It sounds so simple yet I’ve never heard of anyone doing it before. My gf does hot dog fried rice, but bacon is a whole other story!

    That’s so funny, and something I would totally make, too. I always have bacon in my freezer even though I try to never eat it (alone, at least). I was always fond of fried rice with ham, so why not bacon?

    Bacon fried rice rocks! My mom used to make that (and Spam fried rice, oh the horror) until everyone realized how unhealthy that is.

    When I said the title out loud [Bacon Fried Rice] there was a SkippyFamily stampede to the computer with three voices clamoring “Does Yvo have a picture?” Thank god you did b/c I fear there would’ve been bloodshed.

    You are officially Squirrels new hero – she adores bacon [and can afford it…skinnyminx with good skin] …. and anxiously awaits the next bacon installment….

    and SkippyHusband wants to know if you served it maindish or as a side?

    Me? I would have eaten it right out of the pan with a fork…holding a spatula in the other to fend of the family. Just, y’know…cause I can!

    my mom used to make a dish ‘american fried rice’ and i love it! it has bacon in it too and hot dogs. my kids love it. i will have to blog about it. leftover rice never goes bad in our house as long as there’s bacon around :o)

    Here I am in London, thousands of miles away, but I just made your dish! I googled “bacon and rice” to see what I could do with what little I had in the kitchen. After finding and reading your post, I combined some green beans and chopped chilli, onion and garlic with the bacon and the rice and lo and behold – a decent supper. Thanks!
