Recipe Fridays: Kale & Tortellini Soup

I’ve mentioned before my propensity towards soup-making, and of course that I’m part of a CSA.  One of the easiest ways to use up lots of leafy greens, aside from sauteeing, is putting them in soup.  There are so many different kinds of soup you can make, but this is one of my favorite, one of the easiest in my opinion, and one of the most versatile.  The addition of tortellini makes it a complete meal.  You can use fresh, frozen, you can make your own; I chose to use Buitoni, which I find easily in my local Stop&Shop refrigerated [...]

Recipe Fridays: Reinventing the TV Dinner, pt. 3

Another Thursday has come and gone, which means another TV dinner!  This was one of the simpler ones (from almost a month ago, actually), but it made me pretty happy that night.  Pretty healthy, too.  A quick tortellini soup I threw together, with store-bought three-cheese tortellini in a broth I made.  I actually made the soup a few days before Thursday, and was eating my way through it slowly, so when Thursday came around, I took some soup and heated it up for my dinner.  Honestly, that’s how I usually do it for my Thursday night ritual – heat up [...]

Recipe Fridays: Potato Leek Soup

This was posted over on the Forest Hills CSA website, but I figure if you haven’t seen it, it’s still valid… although it was written in November and it’s February now, so that comment about the weather BECOMING chillier… yeah, not so much.  Enjoy!!!With the weather quickly becoming chillier, what better than to make soup with your CSA goodies?  Leeks, sliced and swished through cold water a few times to dislodge any dirt that may have been stuck in them.  A couple of pounds of Russet potatoes that were then peeled and chopped into cubes.  Everything added together into a [...]

Recipe Fridays: Chicken Stew

What do you do when you’re snowed in?  Personally, I dig through my fridge and cook up my own storm.  I found this giant carrot sitting in the bottom of my vegetable drawer, so I diced him up.  (Psst.  Snowmageddon 2010, not the storm this week.  That was weak.)  Took some cheese and grated it, and broke in my SilPat.  Heart shaped frico or cheese crisp!  Which I promptly placed upon the first bowl of chicken stew I made.  Yum.  I made a huge pot, so the next bowl received a baked-without-rolling crescent roll.  A faked-pot-pie of sorts.  And the [...]

Ben’s Best – Delivery & A Challenge!

Sometimes I get sick.  I hate when I’m sick.  I really do, because I live alone and take care of myself and sometimes when I’m sick I get completely, thoroughly fed up with my whininess (internal as it may be)… and because I seem to get one of two kinds of sick: the more prevalent one, I believe because of all that I do choose to consume, is tummy troubles.  Can’t eat.  Blegh.  Haaate that.  The other kind requires a special diet of just soup, soothing-to-my-throat, no fried foods, less oil, and basically, mostly bland foods… because I can’t talk.  [...]
