Cooking for DLS pt 3

Cooking for DLS pt 3

Another week, another adventure cooking for DLS! This week, I went the easy route – I forget why, exactly, but I made chipotle lime crusted chicken - I believe because I really wanted to make an avocado salad on the side. Part of the fun of cooking just for me has always been that I get to make things to exactly my own tastes and never, ever think twice about what someone else might like or not like. Part of the fun of cooking for someone else has always been trying to balance what I like with what they like – which [...]

Cooking for DLS pt 2

Cooking for DLS pt 2

As I mentioned in my last “Cooking for DLS” post, one of the ways I show I care is cooking for people. I’d had so much fun last time, that this time I went slightly more involved. Since DLS‘d enjoyed the mushroom crostini a lot, and it was similar to my clams with linguine method, I decided to go and make that for him – which he seemed really excited about. Note: I hate electric stove tops. His decided to shut off multiple times in the middle of cooking this, so I would say that it didn’t cook quite as [...]

Recipe Fridays: Chipotle Lime Crusted Chicken

As I mentioned in my post about the Hellmann’s Chicken Challenge (and if you haven’t entered their contest yet, why not?), I made their recipe for chipotle lime encrusted chicken.  This time, I remembered to take pictures so you can see what it looks like.  I started off with the Perdue perfect portions – 5 individually vacuum-sealed boneless-skinless chicken breasts.  When I picked up the chicken, I threw the whole package in the freezer immediately.  So I took two out to defrost in the morning and by the time I was ready to cook, they were both fully defrosted and [...]

Hellmanns Chicken Challenge at Chicken Stadium

Hellmann’s recently created “Chicken Stadium” to host a showdown of three of their top chicken recipes on their website.  They invited a couple of big names to demonstrate the quick&easy recipes for us to watch, and live-streamed the event.  Our first ‘contestant’ was Mark Consuelos, with the #1 recipe on Hellmans’s website, parmesan crusted chicken.  Next was Chef Tim Love, with chipotle lime crusted chicken.   There was a third contestant, but because of where I was sitting, I was unable to get a clean shot of her.  Sissy Biggers presented BBQ cheddar crusted chicken.  After the quick demos – each [...]

Recipe Fridays: Chicken Stew

Recipe Fridays: Chicken Stew

What do you do when you’re snowed in?  Personally, I dig through my fridge and cook up my own storm.  I found this giant carrot sitting in the bottom of my vegetable drawer, so I diced him up.  (Psst.  Snowmageddon 2010, not the storm this week.  That was weak.)  Took some cheese and grated it, and broke in my SilPat.  Heart shaped frico or cheese crisp!  Which I promptly placed upon the first bowl of chicken stew I made.  Yum.  I made a huge pot, so the next bowl received a baked-without-rolling crescent roll.  A faked-pot-pie of sorts.  And the [...]
