The first year I joined a CSA, I posted about it on a near weekly basis. Last year, I posted much more infrequently about it, but I continued to eat my way through boxes of vegetables every week. And this year, I imagine the posts will be even more infrequent, as, for my CSA duties, I’ll be blogging for them (my first article is here!). I made the above with the arugula I got the first week this year. I’ll be honest, I don’t particularly like arugula, so I wilted it a bit to cut through the bitter pepperiness I [...]

Dinner is a necessity, and I have these adorable trays… so I Reinvent the TV Dinner and make myself something yummy to eat in a tray that I can place on my lap (or on a pillow on my lap, because sometimes dinner is HOT). Another Thursday, another TV night and TV dinner for me! This time, I whipped up a few simple items and made them work together for a healthy meal! Since the last potluck, I’d been wanting to approximate TT’s quiche, and finally had the opportunity to do so. Top left is sour cream & guacamole, next to that is the winner of Prevention.com’s 2011 best packaged foods for chips: Laurel Hill Multigrain Chips (which were actually REALLY good), a yummy juicy orange my mom gave me, a quick salad and a thrown together quiche slice. The story of this salad? Well, [...]
