Salad. Cantaloupe, cucumbers, dressed potatoes. Tonnato dressing somewhere.
Garlic scape pesto rotini with oyster mushrooms; soft boiled egg; summer squash; more local strawberries.
Cherries; salad with hazelnuts; shrimp pasta with garlic scape pesto.
Roasted beets; salad; homemade hummus; radishes and local carrots; dressed potatoes.
Roasted beets; fresh mozzarella; ginormous cherries; sun dried tomato pasta with shrimp.
As you can see, a lot of seasonal and some local eating. Love!! Lots of fruit to balance everything.

Do your beets stain your lunch container?

No. I didn’t make these though, and they seemed to have been tossed in olive oil after being roasted so it was oil and not “dye” so to speak.
When I roast beets, I peel them before roasting, and those didn’t stain my containers either (years ago).
