Little Big Apple – Caramel Mousse, Crisp Apples, Apple Chantilly
In case you haven’t heard, there’s a new site for foodies to go for inspiration on all things food: Taste by Four Seasons. Recipes, gorgeous photos, up close and personal chef moments… it’s a lovely site that deserves a look, with fabulous recipes and lots of fun tidbits like one ingredient, three ways – and you can vote on your favorites. Definitely check that out – and be sure to vote on your favorite way to use kale, the current ingredient being showcased three different ways on the site!
The above photo is from the launch event held in NYC a few weeks ago – we were treated to lovely desserts by Salvatore Martone, the executive pastry chef at Four Seasons New York and this year’s winner of the StarChefs pastry competition. The event showcased the apple (this is New York!), by 4 different chefs from around the world’s Four Season properties… we had Boston, St. Petersburg, and the two New York chefs. Absolutely delicious… I wish the website would allow for ordering “room service” from the chefs around the world!

I’ve stayed in the Four Seasons Boston several years ago. One of the nicest suites I’ve ever had the privilege to stay in.

It does look a bit like a cherry… the angle of the photograph makes it hard to see the green leaf that lets you know it’s an apple. The ‘stem’ is actually a piece of chocolate, ate the whole top apple in one bite, really delicious!
