Quite a number of beer styles have been brought back from the brink of extinction in the last few decades. Belgian Witbier, for example, would possibly be a footnote in history if it weren’t for Pierre Celis’ efforts in creating his eponymous brewery in Texas; now there are scores of American versions, both good (hello, Ommegang Witte) and mediocre (sorry, Blue Moon). Back towards the beginning of the year, CT and I learned that CT’s Sister’s Sister-in-Law would be getting married in Panama at the end of July. Why Panama? The Bride’s parents live down there now full-time. We learned that Panama has a huge ex-pat population mostly because it is so cheap and the U.S. Dollar is the functional currency down there. Basic Sandwich Bread

When I first decided I wanted to learn how to make bread, I started with a bread machine and a recipe I found online.  I’ve been using the recipe for years now.  For the most part, the basics of the recipe haven’t changed, though I have tweaked it slightly to suit me over the years.  I use only unbleached white flour now as I like how it tastes the best.  I also like the consistency of the bread loaf.  I long ago quit using molasses as I find it makes my dough too gummy.  As well, I’ve graduated from the [...]
