Some days, you just want a big bowl of comfort. One day recently, that’s how I was feeling: I wanted to curl up into a ball, and just shovel spoonfuls of cheesy goodness into my mouth.
So I made a recipe I hadn’t used before: Alton Brown’s baked mac & cheese. I usually use his stovetop mac & cheese recipe, which, it turns out, I like a lot more. But I also can blame this on perhaps I didn’t add enough salt, or used the wrong cheese; I later melted the leftovers on the stove and added a bit of milk, finely chopped (seeded) jalapenos, and it tasted great!
Even in my miserable state, I wasn’t about to forego veggies! I’d spent the day curled up on the couch watching TV, and when I saw Giada make artichoke gratinata, I knew that’s what I wanted.
I just didn’t know that it would take searching through four different grocery stores before frozen artichoke hearts would be found! And these things are expensive: $5 or so for a bag. I’m going to have to look for them at Costco or BJ’s (wholesale clubs, where you buy things in bulk) – that’s just ridiculous. I really liked the dish – there was a lot of flavor going on, the crust was crunchy while the artichoke heart itself was creamy in a way, tender, and very soothing to my aching self. I definitely want to stock artichoke hearts in my freezer so I can make this anytime I feel like… Quick, easy and delicious. The way I like things!
Good food makes nearly everything all better. This time was no exception. I’ll be okay 🙂
