The forecast called for 8-13 inches of snow. At this writing, I see no snow outside my window at all. Oh well. I stayed in today and wrote for most of it, the way I’m supposed to be doing daily but haven’t had any time to do so; I don’t currently have a firm grasp on my schedule and find my days hectic, frantic running around trying to make the next appointment on time. Sigh. I’ll be fine. No complaining, just… tired. Exhausted, really, but that borders on complaining.
In any case, I wound up making myself a big pot of miso-tofu-seaweed soup for the weekend of being snowed in. But before I added the tofu, I added frozen udon and whipped up for myself the above bowl of miso udon with seaweed, XO dumplings and those pork-stuffed-fishballs my friend Ailin gave me. And damn are they good. That whole bowl of deliciousness was awesome… and now I have miso-tofu-seaweed soup to last me for a few days, if it will actually snow… and not just be frigidly cold out *shivers*

Those pork stuffed fishballs are just unbelievable. I get mine in Flushing. So far, as of 3:06 a.m. there is no snow on the north shore of Suffolk County. Good luck with the storm in your area. And good eats! My fish balls are made and ready to accompany my whole wheat pasta =)
