Yet another non-recipe…
I stole this idea from either Rachael, Giada, maybe even – gasp! – Sandra. I just know that I’ve left the TV on with Food Network playing so much (in the past; don’t do that anymore!), that once upon a time, it got put in my head that hey, ice cream sandwiches are just softened ice cream, slapped between two cookies, and then frozen.
A week ago, I went into Duane Reade (Long’s, Genovese, CVS, Rite Aid, whatever’s in your town, same concept), and stumbled on these cookies for $1.50 a box of 10. I was like, eh, why not, giant, double Dutch chocolate cookies (so the name was)? I bought them, ate one after lunch, and immediately was struck by how much they taste like ice cream sandwich cookies (not mushy wafers, but just… like, they have the right texture and taste for it).
So I went home, bought a carton of vanilla ice cream when I couldn’t find coffee (BF’s favorite), slapped some between the two cookies, and was immensely pleased with the results. How awesome is that? I need to make the rest of them, and then wrap them in plastic wrap to just stick in the freezer for a hot day. So easy, awesome results, and delicious!
They received the BF seal of approval!
