Ooh boy, doesn’t that just make you salivate? I know it makes me just want to lick the screen…
Ok, I’m back. I went off to have lunch, couldn’t stand looking at these pictures without eating more of it…
The recipe for this is pretty simple, and I’m positive someone will tell me I’m doing it wrong. Well… no, I’m not doing it wrong. There are regional variations on this dish, and on top of that, there are variations on what people like themselves. So, here’s my recipe, adapted from what I think is my brother-in-law’s recipe, to my tastes.
Oh, and credit for inspiring me / making me want nachos goes to Not Exactly Bento, her recipe here. Mine is similar but not quite the same.
1 lb. or so ground sirloin (do NOT get extra lean, you need the fat! 80/20 is good)
1 can kidney beans
2 cans diced tomatoes, drained
chopped onions
chopped garlic (I love garlic, so I added 2 cloves)
shredded cheeses (I bought Trader Joe’s Mexican blend)
1 envelope taco seasoning
homemade salsa
sour cream (optional)
homemade guacamole (I’ll be whipping up a batch in a few days; I bought my avocadoes on Wednesday and they’re not quite ripe enough yet! I’ll be adding cilantro, garlic, and perhas jalapenos to that recipe as well…)
tortilla chips
Brown ground sirloin in pan with onions and garlic. Add taco seasoning; stir to mix. Add tomatoes. Add kidney beans. Heat through.
Serve with chips, cheese, sour cream, whatever accoutrements you like.
As you can see, I prefer not to have my chips covered- I actually use a spoon and individually scoop it on the chip I’m eating, and keep doing that as I go. I don’t like getting my fingers dirty and in some instances, I’ve found layering it on top will make my chips soggy, so a big no-no… Heh. Sometimes, if I’m feeling particularly lazy, I’ll even take everything in a bowl, make sure the cheese is melted, and then stir it altogether (meat mixture, cheese, sour cream and salsa – haven’t yet tried this with guacamole, not sure I will). YUM!!!
***If you’re really keen eyed, you might notice there are no beans in the pictures. BF doesn’t like/eat beans so I kindly made it without beans, we had dinner, and then I added the can of rinsed beans, heating them through before turning off the flame and allowing to cool so I could put away the leftovers.
