Mix ingredients. Let sit for at least an hour in the fridge to allow blending of flavors. That’s it. No, really- that’s how easy it is.
Ok, so I’m making a batch right now and I separated the steps a little. I juiced the lemon into an empty container first, then added a couple of dashes of dried dill, letting it start to re-hydrate, then I chopped up the onion and added it. I’m letting that all sit in my fridge right now, to soften/”cook” the onion a little first, before I add the mayonnaise and the relish (because I chopped the onion a little roughly, I didn’t think it would sweeten up all by the time I plan to use it tonight, so I let the onions work directly in the lemon juice instead of letting it work through the mayo).
Enjoy with fried fish, baked white fishes, french fries, fried chicken, whatever strikes your fancy. Also great as a spread on sandwiches… and my personal favorite, just add a can or two of tuna (depending on your preferred ratio of tuna-to-mayo), voila, tuna salad
